Egg and chips, also known as chips and egg, is a popular dish in the United Kingdom, consisting simply of chips served with fried eggs.

Ingredient
2 large chipping potatoes
(you want a nice floury type of potato such as a Maris Piper, King Edward, Desiree, etc.
old potatoes work better than new, in North America I would use a russet or baking potato)
Oil for frying the chips
a large knob of butter
2 large free range organic eggs, at room temperature
sea salt and freshly ground black pepper
(Malt vinegar for the chips)
